PATCHI PULUSU

INGREDIENTS:

Tamarind Juice          :             2 cups
Groundnut powder   :              2 tbls
Chopped onions       :              1 cup
Salt                          :               1 tbls
Garlic cloves            :              3 nos
Popu dinusulu (red chilli, urad dal, cumin seeds, jeera seeds) - 1 tbls
oil                            :            2 tbls

Preparation:

Take tamarind juice in a bowl, add sliced onion, salt and groundnut powder.
Mix this thoroughly.
Now add oil in a pan, when hot add garlic cloves, red chilli, urad dal, cumin seeds, jeera seeds to it.
You can also add curry leaves and coriander leaves.
Now add this into the tamarind mixture.
Your favorite dish patchi pulusu is ready to serve.

Mushroom Pakodi

Ingredients:

Besan                                    -                              1 cup
Mushrooms                       -                              200 grm
Green Chilli                         -                              4 Nos
Onion                                    -                              2 Nos
Curry leaves                       -                              2 stems
Coriander leaves              -                              ¼ cup
Cumin seeds                      -                              ½ cup

Preparation:

Wash the mushrooms, and cut it into pieces.
Take a bowl, add besan, washed mushrooms pieces, chilli, Onion slices, curry leaves, coriander leaves, cumin seeds and mix them by adding water.
Mix them to form a paste.
Now add oil in a pan for deep fry.
When hot add the paste by using a spoon. Make this fry red.
Remove from the oil and serve hot in a serving bowl.
Mushrooms add an extra flavor to the dish.

Horse gram java / Liquid

Ingredients:

Ulavalu  powder    or Ulavalu   -         1 - 2 tbls
Cumin seeds (jeelakara) - 1 tbls
Salt    -   As per taste

Preparation:

Take a bowl, add 250ml water into it.
Boil it. Now take ulava powder in a cup and make it into fine paste by adding water.
Add cumin seeds in the boiling water and ulava paste after a minute.
Stir it well for 10 - 15 minutes. 
Finally add salt to the mixture and serve hot.
You can filter the water into a glass and drink.
Its good to eat the filtered waste too.

Pumpkin curry (Gummadikaya kura)

Ingredients:

 

Pumpkin pieces                                -              2 cups
Chana dal                            -              ¼ tbls
Mustard seeds                  -              ¼ tbls
Cumin seeds                      -              ¼ tbls
Urad dal                               -              ¼ tbls
Red chilli                              -              3 nos
Curry leaves
Coriander leaves

Preparation:


Add pumpkin pieces, salt and water in the pressure cooker and cook for 5 – 6 whistles. Soon after the whistle vanishes off open the cooker and remove the water and keep it aside.
Take a pan add oil, when hot add chana dal, urad dal, red chilli, cumin seeds, mustard seeds and turmeric. When chit-phat add curry leaves, coriander leaves and cooked pumpkin pieces and fry for 2 minutes. Now serve the dish in a serving bowl.

Rice, Roti, Puri



Uses

Pumpkin is good for women.
Women should take this food compulsory at least 3 times in a year.
Pumpkin is a calcium rich food which helps women to stay fit and strong.
 

Tomato soya powder (meal maker) curry (Soya keema)

Ingredients:


Soya powder                     -              ½ cup
Tomato                                                -              2 Nos
Salt, red chilli powder, turmeric, Garam masala, graded dried coconut – taste requirement
Green chilli                         -              2 Nos
Onion                                    -              1 Nos

Preparation:


Take a pan, add oil to it. When hot add green chilli, onion and salt into it. Fry it for 2 minutes. Now add tomato, soya powder, red chilli powder, salt and water. Mix it and make it cook for 5 minutes under small flame. Now add Garam masala, coconut powder and water and cook it for 5 more minutes and serve hot in a serving bowl.

Cumin Rasam



Ingredients:

 

Cumin                  
Coriander seeds              
Dried coconut                   
Red chilli              -              5 Nos
Turmaric              -              one pinch
Tamarind
Jaggery
Coriander leaves
Garlic
Curry leaves

Preparation:

 

Take a pan and fry cumin, coriander seeds, coconut and red chilli one after the other and make it into a fine powder.
Now take a pan add two cups of tamarind water, salt, 3 tbls of the prepared powder, turmeric, jaggery and coriander leaves into it and make it boil for ½ hour in a small flame.
Now in another pan add oil and when hot add popu dinusulu and pour it in the above rasam.
Now serve hot the cumin rasam.

Combination dishes.

Rice, Roti, Dosa, Idly.
