PATCHI PULUSU

INGREDIENTS:

Tamarind Juice          :             2 cups
Groundnut powder   :              2 tbls
Chopped onions       :              1 cup
Salt                          :               1 tbls
Garlic cloves            :              3 nos
Popu dinusulu (red chilli, urad dal, cumin seeds, jeera seeds) - 1 tbls
oil                            :            2 tbls

Preparation:

Take tamarind juice in a bowl, add sliced onion, salt and groundnut powder.
Mix this thoroughly.
Now add oil in a pan, when hot add garlic cloves, red chilli, urad dal, cumin seeds, jeera seeds to it.
You can also add curry leaves and coriander leaves.
Now add this into the tamarind mixture.
Your favorite dish patchi pulusu is ready to serve.

Mushroom Pickle

Ingredients:


Mushrooms              -                 125 grm
Turmaric                   -                 1 tbls
Chilli powder            -                 1 tbls
Salt                           -                1 tbls
Oil                            -                1 cup
Fennel seeds             -                1 tbls
Cumin Powder          -                1 tbls
Methi powder           -                2 tbls

Preparation:

  • Clean the mushroom and make it into pieces.
  • Firstly cook mushrooms in water for 10 - 15 minutes.
  • Dry this for 2 - 3 hrs.
  • Take this in a bowl and add turmaric, salt, chilli powder, fennel powder, cumin powder, methi powder and oil.
  • Mix well and serve in a serving bowl.

DRUM STICK MUSHROOM:

Ingredients:


Mushroom                                         -              200 Grm
Drum stick                                         -              9 Nos
Onion                                                -              1 NO
Green Chilly                                      -              2 Nos
Milk                                                  -              1 cup
Oil                                                    -              ½ cup
Bengal gram flour                              -              ½ cup

Preparation:


Cut the drum sticks, cook these in water and squeeze off the paste from the sticks and keep this aside. Heat oil in a pan; add mushrooms cook it for 2 minutes. Now add milk and cook the mushrooms. In another pan, heat oil, onion, chilly and Bengal gram flour and fry it. Add drum stick paste and mushrooms in the pan. Add some milk in it and cook for 10 – 15 minutes in a small flame. Lastly add salt stir and serve hot in a serving bowl.

Capsicum mushroom:

Ingredients:


Mushrooms                                       -              300 grm
Capsicum                                          -              4 Nos
Oil                                                     -              50 grm
Onion                                                -              1 Nos
Green Chilly                                       -              2 Nos    
Fenugreek leaves                                -              1 cup

Preparation:


Cut the capsicum on four sides. Remove the seeds inside and cook these with vapor for 10 minutes in a Jalleda(Plate whole with holes). In a pan heat oil and add onions, chilly, fenugreek fry for 2 minutes. Add mushrooms, mix it thoroughly and close the pan. Cook the mushrooms by stirring frequently. Now stuff the curry into the capsicum and fry it on a pan in slow flame. Now sprinkle salt on it and serve hot.

Mushroom salad

Ingredients:


Mushroom                                         -              150 grm
Onion                                                -              1 Nos
Bread pieces                                      -              1 ½ cup
Tomato ketchup                                 -              1 tbls
Kaju                                                  -              ½ cup
Lemon juice                                       -              1 tbls
Black pepper                                     -             1/4 tbls
Butter

Preparation:


Take butter in a pan when hot add kaju, bread pieces, onion and fry it.
Fry mushrooms in butter. Take a bowl and add kaju, bread pieces, onion, tomato ketchup, lemon juice and pepper. Mix this mixture and add this into the pan and fry this for 12 – 13 minutes in a slow flame. Now add salt and mix it cook for 2 more minutes and serve hot.

Maida (White flour) Mushrooms

Ingredients:

Mushrooms                                     -              250 grm
Black pepper, salt                            -              Taste
Oil                                                  -              50 grm
Maida                                             -              2 tbls

Preparation:

Clean the mushrooms and fry it in oil till soft. 
Add pepper powder, maida and fry it for 4 – 5 minutes on a slow flame.
You can also add 50 ml milk to the dish for another taste.

MASALA MUSHROOM:

Ingredients:


Mushroom                                           -              100 grm
Onion                                                  -              1 big
Coriander seeds                                  -              1 tbls
Cumin seeds                                       -              ½ tbls
Black pepper                                      -              6 nos
Cinnamon and cloves                           -              4 nos
Cardamom                                          -              2 Nos
Dried coconut                                      -              small piece

Preparation:

Masala powder preparation: 

In a mixer add coriander seeds, cumin seeds, black pepper, cinnamon and cloves, cardamom, dried coconut and grind it into a fine powder.
In a plate add mushrooms, now mix it with salt and turmeric thoroughly (it will not become soft by doing like this).
Now deepfry the mushrooms and keep this aside.
In a pan add oil, chopped onion, chilli and fry this till red. Now add the mushrooms in the pan and fry for 2 minutes.
Add masala powder into the pan fry this for 3 more minutes. Lastly add chilli powder, mix it and serve hot in a serving bowl with coriander garnish.
