Kajjikayalu

Ingredients: 

 

Jaggery                 -              50 Grm
Graded dried coconut    -              50 Grm
Oats                       -              ½ Cup
Kaju                       -              ½ cup
Sesame                                -              ¼ cup
Badham               -              ¼ Cup
Raisins                  -              ¼ cup
Elachi                     -              2 Pinch
Maida                   -              2 cups
Dalda                     -              100 grm
Salt                         -              as required

Preparation:

 

Take a bowl, add maida & salt in it. Now add melted dalda and mix it with hands to make it dough. See the dough to be soft. Keep it store for ½ hour.
Now take a pan add oil for deep fry.
In the mean take a bowl add fried oats powder, kaju powder, badham, raisins, sesame, graded coconut, Jaggery and elachi and mix it well.
Now make roti with the dough and stuff it with the dry fruit mixture and close it. We can use kajjikayalu
machine to make the shape perfectly.
Now see the oil is hot and make this Kajjikayalu fry in oil. See it attains brown color.
Now remove the Kajjikayalu from the oil and serve hot.
This sweet can be stored for 15 days.
