Baingan Bartha - Punjabi Dish

Ingredients:

Big Brinjal (Egg Plant)        -     1
Tomato                -    1
Cumin Seeds            -    1/4 tbls
Cumin Powder            -    1/4 tbls
Mustard Oil (Aava nuna In Telugu)-    4 tbls
Butter                -    1 tbls
Turmaric            -    Pinch
Coriander leaves, Coriander Powder, Green Chilli, Curry Leaves, Chilli Powder, Salt, Curry leaves.
Garlic Cloves            -    2
Onion                -    1

Preparation:

Take the Brinjal, apply oil to it throughly.
Now keep it directly over the stove flame and fry till its cooked.
Hint: Use a Pick to see its cooked. Dip the pick if it easily enters into the Brinjal its cooked.
Take a pan and keep it on the stove. Add oil to it, when hot add cumin seeds, onion, Curry leaves, green chilli and fry.
Add tomato and make it cook for a minute. Then add salt, coriander powder, chilli powder to it and cook it for a minute.
Finally add Brinjal and fry for 5 minutes.
Now off the stove and garnish the dish with butter & coriander leaves.
Serve Hot.
