Masala stuffed Brinjal (Masala vankaya)



Ingredients:


Brinjal                   -              5 Nos
Ground nut powder       -              2 tbls (Fried and powdered)
Sesame seeds powder  -              2 tbls (Fried and powdered)
Red chilli powder             -              ½ tbls
Tamarind paste -              2 – 3 tbls
Garam masala   -              1 tbls
Graded dried coconut    -              1 tbls

Preparation:


Mix groundnut powder, sesame powder and coconut powder and tamarind paste. Stuff this in the brinjal and keep this aside.
Add oil in a pan, when hot add chana dal, urad dal, red chilli, cumin seeds, mustard seeds and turmeric. When chit-phat add curry leaves, coriander leaves, onions and turmeric. Now add stuffed brinjal in the pan and close it and make it fry. After some time when the brinjal in half boiled add the left powder in the pan and mix it. Place the plate on the pan and fry it. Now add salt and red chilli powder and cook for 2 more minutes and serve hot in a serving bowl.

Combination dishes


Rice, roti, puri.
