Baigan Bartha - Punjbi Special Dish

Baigan which is also called as Brinjal is a very favoritedish for most of us. We know to cook brinjal in many varieties. But knew many of us don't know this dish which is so special dish in Punjab.

Now let us go through the procedure of cooking.

Ingradients:

Big Brinjal - 1
Tomato  - 2
Cumin Seeds & Cumin Seeds Powder
Mustard oil
Butter, Turmaric
Coriander Leaves
Cloves - 4
Onions - 2
Green Chili  - 4
Chili Powder
Coriander Powder - 1 tbs

Directions:  

  • Apply Mustard oil for Brinjal, and make it heat directly on the coal or stove. 
  • Now take a toothpick and dip it on Brinjal whether it is cooked or not. If this is cooked the toothpick merges into.
  • Now peel off the peel of Brinjal and cut it into pieces.
  • Now take a pan, add butter to it.
  • Soon the butter is hot, add Cumin seeds, Onion & Green chili in it. Now add chopped tomato into it and make it cook for 2 minutes.
  • Now add salt, Coriander Powder, Cumin Powder, Chili Powder and cook it for 2 minutes.
  • Now add Brinjal pieces to it and make it cook, after some time add butter on it and serve this with Coriander Leaves garnish.
  • Now your most exciting curry Baigan Bartha is ready to serve hot.
