Bow Ties with Spring Vegetables

Great Fiber food.

Ingredient:

2 oz dry whole-grain farfalle pasta
2 tsp olive oil
1/2 cup artichoke hearts
1/4 cup sliced red onion
1/4 cup peas
1 Tbsp chopped fresh mint

Directions:

  • Take a bowl, add 2 cups of water, add salt to it. Make this water boil.
  • Add pasta to this boiled water, make it cook soft and rinse the water.
  • Take a pan, add oil to it. Now toss the vegetables and mint.
  • Add some salt and pepper to taste.
